Voz needs Accessibility permission to paste into other apps, and the Fn double-tap trigger additionally needs Input Monitoring. Both live in System Settings → Privacy & Security. macOS sometimes keeps a stale entry after an update — removing Voz from the list and re-adding it fixes it more often than it should.
Voz is signed with a Developer ID and notarized by Apple, so this shouldn't happen. If it does, the download was probably interrupted — the disk image is 149 MB, and a partial file fails the signature check. Download it again before doing anything more drastic.
Set your language explicitly in Settings rather than leaving it on auto. Auto-detect listens to the first stretch of audio, and on a noisy room or a short clip it can pick the wrong language and then confidently transcribe nonsense. If it's a specific word it keeps missing — a name, a bit of jargon — add it to custom vocabulary.
